Green Onion and Cayenne Cornbread

Ingredients:

2 1/4 C all-purpose flour
7 1/2 t baking powder
6 T sugar
2 1/2 t salt
1/4 t cayenne pepper
3 3/4 C fine corn meal

3 beaten eggs
6 T butter, melted
3 T bacon fat
3 C whole milk
2 bunches of green onions, green part chopped fine

Preheat oven to 425 degrees.

Sift the first four ingredients together in a large bowl then mix in the corn meal.

In a separate bowl, combine the rest of the ingredients.

With a large rubber spatula, combine the wet ingredients into the dry ingredients with several swift strokes, then add the green tops of the finely chopped green onions.

Mix just enough to combine all the ingredients. Pour this mixture into a hot 9 X 12 inch baking pan that has been coated with 3 tablespoons of bacon drippings.

Bake for 20 to 25 minutes or until golden and set.
