One-Bowl/One-Pan Devil's Food Cake
5 T butter
1/2 c Dutch process cocoa
1 C firmly-packed brown sugar
2 large eggs
1 T vanilla
1/2 t baking soda
1 t baking powder
3/4 C flour
1/2 cup of very warm espresso coffee OR 1/2 cup of very warm water with 1 t instant
espresso crystals (Medaglia d'Oro is a good choice) added
Preheat oven to 350 degrees. Grease and flour (or spray Baker's Secret) one 9 inch square pan.
Place butter in large microwave-safe bowl. Microwave for 1 minute until butter melts. Add brown sugar and whisk until blended. Add cocoa and keep whisking until it all pulls away from the sides of the bowl. (This is one cake that doesn't require an electric mixer. Half the fun of it is in watching the transformation . . . and the eating, of course.) Add vanilla, baking soda, baking powder, eggs. Mix just until blended. Add flour; mix just until blended. Add hot water/coffee mixture and stir just until blended. Mixture will be very thin and runny and you'll wonder what kind of mess you're going to end up with but have faith! Pour this gloppy, runny mess into your prepared cake pan and slide into the oven for 25 minutes.
Serve with a light sprinkle of powdered sugar on top.
