I'm hard at work finishing up the last pages of CASTING SPELLS, my November trade paper release from Berkley, so I'm going to keep this letter short with the promise of an excerpt next month and a much chattier note.
And since Deadline Mania usually means lots and lots of takeout Chinese, I offer you my Alternative to Takeout All-Purpose Stir Fry Sauce:
BARBARA BRETTON'S ALTERNATIVE-TO-TAKEOUT, ALL-PURPOSE SPICY STIR FRY SAUCE
Fresh ginger, finely chopped (to taste)
Fresh garlic, finely chopped (to taste)
3 T soy sauce
2 T oyster sauce
1 T chili paste with garlic (preferably Lan Chi)
dry sherry, a splash (to taste)
rice vinegar, a splash (white vinegar works too)
1 t sugar (brown or white; I prefer brown)
That's your basic sauce. You can build on it from there with hot bean sauce or sweet bean sauce, maybe a little chicken broth to thin it out (and mellow it) or some creamy peanut butter to angle it toward Thai, whatever strikes your fancy.
